Epicure's Caribbean Sweet Potato Salad
3 large sweet potatoes, cut in 1" pieces
2 tbsp vegetable oil
1/2 tsp VE Jamaican Jerk Seasoning
1/4 tsp VE Madras Curry
1 cup mayonnaise
1 tbsp lemon or lime juice
1 cup diced celery
1 tbsp VE 3 Onion Dip Mix
VE Salt & VE Pepper to taste
1. Preheat oven to 400 degrees F.
2. Place cubed potatoes in mixing bowl with vegetable oil, VE Jamaican Jerk Seasoning and VE Madras Curry. Turn out on baking sheet.
3. Bake for 25 minutes or until potatoes are tender. Turn over halfway through.
4. While potatoes are cooking, whisk together mayonnaise, lemon or lime juice, diced celery and VE 3 Onion Dip Mix in bowl. Season to taste with VE Salt and VE Pepper.
5. Stir in hot potatoes. Serve hot or at room temperature.
